KAREN'S ANTIPASTO SALAD - DADDY'S DELI NIGHT
1 small head cauliflower, broken into flowerets
1 green pepper, sliced
1 large carrot, peeled and sliced
1 large onion, sliced
4 stalks celery, cut into bite size chucks
1 cup fresh mushrooms
1 jar stuffed green olives, drained
1 can black olives, drained
1 jar pepperoncini, drained
1 pint cherry tomatoes
1 cup olive oil
1 cup red wine vinegar
1/2 cup white wine vinegar
1/2 cup sugar
2 teaspoons salt
1/4 teaspoon black pepper
1 teaspoon oregano leaves, crushed
Combine vegetables in a large bowl. Combine remaining ingredients; pour over the vegetable and mix well. Cover and chill at least 12 hours, stirring several times while marinating. ENJOY!
